Winter-Grilled
Fish with Chocolate Peanut Butter Infusion

   Cod (or
  other mild-flavored fish) fillets Salt Pepper Flour Margarine  | 
  
   Season
  fish fillets with salt and pepper and dredge in flour.  Heat margarine in skillet.  Sauté fish fillets coated side down for 3
  min.  Turn over, place in 450 degree
  oven and bake until flaky (about 8 min.). 
  Serve with peanut butter chocolate infusion.  |

   Chocolate
  Peanut Butter Infusion 1 c. dry
  white wine 2 tsp.
  shallots, chopped 1/3 c.
  heavy cream 5 T. cold
  unsalted butter, cut into small cubes 1/3 c.
  creamy peanut butter ˝ tsp.
  soy sauce  1 ˝ T.
  cocoa   | 
  
   Blend soy
  sauce, peanut butter and cocoa.  Cook
  shallots and wine over high heat until reduced to 1 T. volume.  Add heavy cream and cook until reduced by
  1/3.  Over low heat, stir in butter a
  few cubes at a time until dispersed. 
  Stir in peanut butter mixture and keep warm until served.    |
